It's light, healthy, flavorful and only requires whisking together 4 ingredients.
The Skinny on Cucumber Soup
This easy chilled cucumber soup is made using prepared tzatziki, a Greek cucumber yogurt dip available in many delis. I found it in the deli section of my favorite supermarket.
If you can't find tzatziki, substitute a creamy cucumber salad.

I made this last week for lunch with Peter since he loves tzatziki. Served with little open-faced smoked salmon cucumber sandwiches it made for a light yet satisfying lunch.

Super Easy Chilled Cucumber Soup
This super easy + deliciously refreshing chilled cucumber soup has just 4 ingredients and stirs together in minutes. For additional creaminess stir in a little more plain non-fat Greek yogurt.

Ingredients
- 1 large container (12 ounces) Tzatziki or creamy cucumber salad
- 14 ounces chicken broth
- ½ teaspoon dried dill weed
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
In a large bowl whisk all the ingredients together thoroughly.
Cover and refrigerate until well chilled.
Recipe Notes
For additional creaminess, add a couple tablespoons plain nonfat Greek yogurt.
