Delicious stollen bites are full of warm spices and a sugar free marzipan center for a low carb and gluten free festive treat. We have taken low carb Stollen ingredients and shaped them into bite-sized treats making them perfect for snaking or serving at holiday gatherings.

Low carb dough balls are flavored with cranberries, sugar free candied peel, almonds and spices with a dusty low carb powdered sugar coating. Delicious to eat and fun to make too.

What is Stollen?

Stollen is a traditional German bread-like fruitcake that is closely associated with the Christmas season. It originated in the city of Dresden, Germany, and has been a popular holiday treat for centuries. Made from a sweet, yeasted dough enriched with butter, sugar, and spices. It is generously filled with dried fruits, nuts, and sometimes soaked in rum or brandy.

After baking, Stollen is dusted with powdered sugar, giving it a snowy appearance. It is enjoyed during the holiday season as a festive and sweet treat, often sliced and served with coffee or tea. Stollen has a rich and fruity flavor, making it a beloved holiday tradition in Germany and beyond.

Ingredients

We have used low carb ingredients to make a version of the classic Stollen and made bite sized form for portion control.

  • Almond flour - Almond flour is also used in the original recipe. We use finely ground almond flour.
  • Coconut flour - helps to give the dough structure.
  • Whey Protein powder - increases the protein content.
  • Low carb sweetener - we used brown monkfruit but any other low carb sweetener can be used.
  • Dried cranberries - traditionally the dried fruit in stollen is soaked in rum or brandy. This is optional but does give a great flavor. We use a lower sugar dried cranberries but you can make your own too.
  • Citrus peel - finely chopped sugar free orange peel and lemon peel. We make our own.
  • Almonds - sliced almonds are used but you could swap with chopped walnuts, hazelnuts or pecans.
  • Cream cheese - helps give the dough a rich consistency.
  • Xanthan gum - in the absence of gluten, we use xanthan gum. This could be replaced with psyllium husk powder.
  • Marzipan - homemade sugar free marzipan makes the center of the stollen bites. This could be omitted if you are not a marzipan fan.
  • Cinnamon - an essential spice in Stollen
  • Allspice - If you can't find allspice, use a mix of cinnamon, nutmeg and ground cloves, in equal portions.
  • Allulose - cooked stollen bites are dipped in powdered sugar or icing sugar so we use allulose as a low carb alternative. You can ground any granular low carb sugar in a coffee grinder for use too.

How to make Stollen Bites

Mix the dough, add the dried cranberries, candied peel and sliced almonds.

Take a small amount of dough and flatten out. Place a marzipan ball in the centre.

Brush with melted butter.

Dip the stollen bites into the allulose or other powdered low carb sweetener.

Storage

Keep the stollen bites in a sealed container and in the fridge. They should last up to 5 days but not in our house as the Chief Taster devoured them within 3 days!

Stollen Bites Recipe Tips

Watch your Stollen bites carefully while baking to prevent overcooking. Almond and coconut flours can brown quickly.

If you choose to soak the dried fruits in rum or brandy, do so for several hours or overnight to allow them to absorb the flavors.

Shape the dough into bite-sized portions, usually small oval or rectangular shapes.

Make the keto marzipan before making these treats and any leftover can be used for other recipes, or made into a sweet treats.

Ingredients

Dry Ingredients

Wet Ingredients

  • 4 tablespoons melted butter
  • 2 oz cream cheese
  • 2 large eggs
  • 1 teaspoon vanilla

Fruit and Nuts

  • 1 cup sugar free candied peel
  • ½ cup sliced almonds
  • ½ cup dried cranberries sugar free or homemade
  • 3 tablespoons rum or brandy (optional)

Spices

  • 1 teaspoon cinnamon
  • 1 teaspoon allspice

Marzipan

  • 4 oz sugar free marzipan

Topping

  • 2 tablespoons melted butter
  • ¼ cup allulose other powdered low carb sweetener

Instructions

Soak the Cranberries

  • Place the cranberries in a medium bowl and add the rum. Soak for at least 2 hours or overnight.

Make the Dough

  • Preheat the oven to 180C/350F degrees and line a baking tray with parchment paper.

  • In a medium bowl add all the dry ingredients and mix.

  • In another medium bowl beat the wet ingredients until smooth.

  • Pour the wet ingredients into the dry and mix well.

  • Drain the cranberries (if using rum) and stir in the cranberries, candied peel and almond slices until you have a stiff dough that can be shaped.

  • Shape the dough into bite-sized portions or small oval/rectangular shapes and flatten.

  • Roll the marzipan into balls for the filling.

  • Place the marzipan balls in the center of the dough and mold the dough around the marzipan.

  • Place the stollen bites on the baking tray and bake for 20-25 minutes until golden, turning over half way through for even baking.

  • Remove the Stollen bites from the oven and allow them to cool completely on a wire rack.

Topping

  • Brush the stollen bites with melted butter and dip into the allulose or powdered low carb sweetener.

  • Serve and enjoy your homemade Stollen bites! They are perfect for holiday gatherings or as a sweet treat with a cup of tea or coffee.

Notes

Makes 24 bites but this may vary on the size you make.

The marzipan center is optional.

    Hi, Just wondered if there was a typo in the nutritional values - If the carbs are 4g and the fiber 3g then aren't the net carbs 1g, not 3g as stated in the recipe?
